Garlic Roast Potatoes

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 6
  • 8 tablespoons light olive oil
  • 3 lbs potatoes, peeled and cut into large chunks
  • 3 bay leaves
  • 1 head garlic, cloves separated and flattened with the back of a knife

Recipe

  • 1 heat the oil in a large roasting tin in an oven set to 350°f.
  • 2 boil the potatoes and bay leaves in a pan of lightly salted water then simmer for 10 mins until tender.
  • 3 drain the potatoes in a colander, shaking them around in order to fluff up the outsides.
  • 4 tip the potatoes into the hot oil, add the garlic cloves and roast in the oven for 1 hour 20 minutes.
