Garlicky Cannellini Beans

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 shallots, finely chopped
  • 1 garlic clove, minced
  • 2 (14 ounce) cans cannellini beans, drained and rinsed
  • 7 tablespoons vegetable broth
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice
  • salt and pepper

Recipe

  • 1 heat the oil in a saucepan, add the shallots and garlic and cook for 2-3 mins until tender but not colored.
  • 2 add the cannellini beans and broth and bring to the boil. simmer for about 4 mins until the beans are tender and heated through.
  • 3 add the parsley and lemon juice, season and serve immediately.
