Eight Layer Greek Dip

Ingredients

  • one 10-oz . container roasted red pepper hummus
  • 1 cup fresh baby spinach, coarsely chopped
  • 1/2 cup sun-dried tomato, reconstituted, chopped
  • 1/2 cup peeled cucumber, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup crumbled reduced-fat feta cheese
  • 2 tablespoons kalamata olives, sliced
  • 1/4 cup pecans, chopped and toasted

Recipe

  • 1 spread hummus on 9-inch serving plate. sprinkle evenly with remaining ingredients and refrigerate until serving time.
