German-style Red Cabbage (rotkohl)

Ingredients

  • 1 small head red cabbage
  • 3 tablespoons bacon grease
  • 2 medium apples, diced
  • 1 cup water
  • 4 tablespoons vinegar
  • 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground cloves

Recipe

  • 1 remove coarse outer leaves from cabbage. cut head into four pieces, remove the hard core and shred finely. melt bacon grease in a large pot, add cabbage and apple, stirring until well-mixed. add water, vinegar and spices. cook until tender, about 1 hour. stir frequently. serve with a favorite main dish such as sauerbraten or roasted lamb shanks.
