German-style Red Cabbage (rotkohl)

Ingredients
- 1 small head red cabbage
- 3 tablespoons bacon grease
- 2 medium apples, diced
- 1 cup water
- 4 tablespoons vinegar
- 4 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ground cloves
Recipe
- 1 remove coarse outer leaves from cabbage. cut head into four pieces, remove the hard core and shred finely. melt bacon grease in a large pot, add cabbage and apple, stirring until well-mixed. add water, vinegar and spices. cook until tender, about 1 hour. stir frequently. serve with a favorite main dish such as sauerbraten or roasted lamb shanks.
