Golden Roast Chicken

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 kg chicken
  • 1 onion, chopped
  • 1 teaspoon salt
  • 2 1/2 cups plain yogurt
  • 2 cups cooked rice
  • 250 g peas (cooked or shelled)
  • 60 g pine nuts
  • salt and pepper

Recipe

  • 1 preheat oven to 180c (350f).
  • 2 place chicken in non metallic dish.
  • 3 combine onion, salt and yogurt, spoon over chicken and marinate in refrigerate for several hours.
  • 4 remove excess marinade.
  • 5 combine remaining ingredients and season to taste.
  • 6 stuff the chicken with the mixture.
  • 7 truss and bake for 1-1/2 hours or until tender.
