Chicken With Pepper And Parsley Crust

Ingredients
- Servings: 4
- 4 skinless boneless chicken breasts
- 1 small red pepper, deseeded and roughly chopped
- 2 cloves garlic, peeled and roughly chopped
- 1 ounce parsley
- 2 tablespoons olive oil
Recipe
- 1 heat the oven to 400°f.
- 2 put the chicken in a shallow ovenproof dish or roasting tin.
- 3 put the pepper, garlic and parsley in a food processor and pulse a few times until coarsely chopped. stir in the oil and season with salt and pepper.
- 4 spread this mixture over the chicken breasts.
- 5 spoon 2 tbs of water into the base of the tinn or dish, then roast for 20-25 mins until the chicken is cooked through.
- 6 serve with your choice of accompaniments.
