Chicken With Pepper And Parsley Crust

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 skinless boneless chicken breasts
  • 1 small red pepper, deseeded and roughly chopped
  • 2 cloves garlic, peeled and roughly chopped
  • 1 ounce parsley
  • 2 tablespoons olive oil

Recipe

  • 1 heat the oven to 400°f.
  • 2 put the chicken in a shallow ovenproof dish or roasting tin.
  • 3 put the pepper, garlic and parsley in a food processor and pulse a few times until coarsely chopped. stir in the oil and season with salt and pepper.
  • 4 spread this mixture over the chicken breasts.
  • 5 spoon 2 tbs of water into the base of the tinn or dish, then roast for 20-25 mins until the chicken is cooked through.
  • 6 serve with your choice of accompaniments.
