Gruyere Popovers

Ingredients
- 3 cups milk
- 3 cups all-purpose flour
- 1 tablespoon kosher salt
- 6 eggs
- 6 ounces gruyere cheese, grated
Recipe
- 1 place baking sheet on bottom rack of oven. place 6 cup popover pan on rack above baking sheet and heat oven to 400 degrees.
- 2 combine flour and salt and sift onto piece of wax or parchment paper.
- 3 warm milk in small saucepan over medium high heat until bubbles form around edges.
- 4 whisk eggs together in a large bowl until frothy, 2-3 minutes. slowly add eggs to warm milk, whisking constantly. gradually add flour mixture, whisking constantly until smooth.
- 5 remove popover pan from over. use paper towel or pastry brush to carefully and completely butter inside of cups (can also use bacon grease, or fat drippings from roasted meat).
- 6 fill cups 3/4 full with popver batter,. sprinkle each with 1/2 oz of cheese.
- 7 bake for 15 minutes; rotate pan. bake additional 30 minutes, or until browned and puffed without opening over door.
- 8 remove pan from oven and invert to remove popovers. serve immediately.
- 9 reheat popover pan in over, re-greasing as necessary, and bake remaining popovers as above.
