Chicken With Prosciutto And Cranberry Sauce

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 ounces butter, softened
  • 2 garlic cloves, crushed
  • 4 large chicken breasts
  • 8 slices prosciutto
  • 1 1/4 cups hot chicken broth
  • 4 tablespoons cranberry sauce
  • 6 tablespoons red wine

Recipe

  • 1 pre heat the oven to 350°f i.
  • 2 n a bowl beat together the butter and garlic. make a deep slit in each chicken breast.
  • 3 spread the butter inside each chicken breast and close the chicken back together. wrap each breast in 2 slices of prosciuttl. place in a roasting tin.
  • 4 pour the hot broth around the chicken and roast for 30 minutes
  • 5 remove the chicken from the oven and roasting pan and cover with foil and a tea towel.
  • 6 place the roasting pan on the hob and add the cranberry sauce and red wine. boil rapidly for 10 mins or until the sauce has thickened.
  • 7 slice the chicken and serve with the sauce.
