Garlic And Herb Roast Lamb

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 -4 lb lamb roast
  • 3 garlic cloves, peeled and slivered
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary, crumbled
  • 2 tablespoons olive oil
  • salt
  • pepper

Recipe

  • 1 combine the garlic and herbs in a small bowl, toss to cover garlic with herbs.
  • 2 use a sharp, narrow-bladed knife and make shot openings into the meat at regular intervals.
  • 3 insert the herb coated garlic slivers into the openings.
  • 4 sprinkle the roast with salt and pepper.
  • 5 cook in rotisserie at 375 degrees fahrenheit for 1 1/2 hours or longer, until cooked through.
