Greek Tomato, Shrimp And Feta

Ingredients

- 1 1/2 lbs shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 3/4 cup onion, chopped
- 1/4 teaspoon red pepper flakes
- 1 teaspoon oregano
- 1/2 teaspoon basil
- 1 tablespoon parsley
- 1 1/2 cups tomatoes, peeled chopped or 1 1/2 cups canned tomatoes
- 1/2 cup wine
- 1/2 cup feta cheese, crumbled
Recipe
- 1 in a pot of boiling water, add shrimp and cook for 1 minute. drain well. place shrimp on bottom of greased baking dish in single layer. set aside.
- 2 in a skillet heat oil. add garlic, onion and red pepper flakes. cook until veggies are soft.
- 3 add oregano, basil, salt and pepper. stir and cook one minute.
- 4 add wine and bring to boil. cook for 2 minutes.
- 5 add tomatoes and stir well. reduce heat to low and simmer 8 minutes. most of liquid should evaporate.
- 6 pour mixture over shrimp in baking dish. top with feta cheese.
- 7 bake, uncovered, at 325 degrees for 15 minutes.
- 8 serve.
