Gruyere And Walnut Biscuits

Ingredients
- 225 g gruyere, grated
- 225 g unsalted butter, room temperature
- 1 teaspoon cayenne pepper (or paprika)
- 1 teaspoon salt
- 350 g plain flour, sifted
- 100 g walnuts, chopped
Recipe
- 1 in a bowl, cream together teh gruyere and butter.
- 2 sift the salt cayenne and flour into another bowl, then gradually add the cheese mixture, then nuts and mix well with hands to form a dough.
- 3 divide the dough into 2 and shape into logs, 4cm ( 1 1/2 inch) in diameter.
- 4 wrap in plastic wrap and chill1 hour.
- 5 preheat oven to 180°c.
- 6 with a sharp knife cut ito 5mm ( 1/4 inch) thick slices. lay on a baking sheet lined with baking paper.
- 7 bake 15-20 minutes until lightly brown. transfer to a wire rack to cool, then store in an airtight container.
