Gruyere Chicken Salad With Walnut Vinaigrette

Ingredients

  • Servings: 8
  • 3 (10 ounce) bags romaine lettuce hearts, chopped
  • 1 lb cooked chicken, thinly sliced
  • 2 ounces gruyere cheese, diced (1/2 cup)
  • 1/4 cup walnuts, finely chopped
  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons orange juice
  • 2 tablespoons parsley, chopped
  • 1 tablespoon chives, chopped
  • 1/2 teaspoon dried chervil or 1 1/2 teaspoons fresh chervil
  • 3/4 teaspoon coarse salt
  • 3/4 teaspoon pepper
  • 1 tablespoon walnuts, finely chopped

Recipe

  • 1 toss the lettuce with chicken, cheese and walnuts.
  • 2 in a food processor or blender, combine all dressing ingredients and blend.
  • 3 pour dressing over salad and toss.
