Gruyere Chicken Salad With Walnut Vinaigrette

Ingredients

- 3 (10 ounce) bags romaine lettuce hearts, chopped
- 1 lb cooked chicken, thinly sliced
- 2 ounces gruyere cheese, diced (1/2 cup)
- 1/4 cup walnuts, finely chopped
- 6 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons orange juice
- 2 tablespoons parsley, chopped
- 1 tablespoon chives, chopped
- 1/2 teaspoon dried chervil or 1 1/2 teaspoons fresh chervil
- 3/4 teaspoon coarse salt
- 3/4 teaspoon pepper
- 1 tablespoon walnuts, finely chopped
Recipe
- 1 toss the lettuce with chicken, cheese and walnuts.
- 2 in a food processor or blender, combine all dressing ingredients and blend.
- 3 pour dressing over salad and toss.
