Chicken And Leek Casserole

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 4 chicken drumsticks
  • 2 chicken breasts
  • 2 large leeks
  • 3 garlic cloves
  • 6 slices bacon
  • 2 cups sliced mushrooms
  • 1 cup chicken stock
  • 1 dash wine
  • chopped fresh parsley, 1 handful of
  • 1/2 teaspoon dried thyme
  • salt and pepper
  • 1 tablespoon olive oil

Recipe

  • 1 heat the olive oil in a large casserole.
  • 2 brown the chicken pieces on all sides until the skin gets a bit crispy.
  • 3 remove the chicken.
  • 4 fry the chopped bacon
  • 5 add the leeks, garlic and mushroom and fry til soft.
  • 6 add the wine and stock.
  • 7 bring to the boil.
  • 8 add the herbs and pepper.
  • 9 cover and put in the oven at 180c for one to two hours - the longer you leave it the more flavoursome, i think.
  • 10 remove from oven, and take out chicken bones, then serve.
