Chicken And Leek Casserole

Ingredients
- Servings: 4
- 4 chicken drumsticks
- 2 chicken breasts
- 2 large leeks
- 3 garlic cloves
- 6 slices bacon
- 2 cups sliced mushrooms
- 1 cup chicken stock
- 1 dash wine
- chopped fresh parsley, 1 handful of
- 1/2 teaspoon dried thyme
- salt and pepper
- 1 tablespoon olive oil
Recipe
- 1 heat the olive oil in a large casserole.
- 2 brown the chicken pieces on all sides until the skin gets a bit crispy.
- 3 remove the chicken.
- 4 fry the chopped bacon
- 5 add the leeks, garlic and mushroom and fry til soft.
- 6 add the wine and stock.
- 7 bring to the boil.
- 8 add the herbs and pepper.
- 9 cover and put in the oven at 180c for one to two hours - the longer you leave it the more flavoursome, i think.
- 10 remove from oven, and take out chicken bones, then serve.
