Coleslaw With Mustard Seed Dressing

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/4 red cabbage, thinly sliced
  • 1/4 cabbage, thinly sliced
  • 1 red pepper, thinly sliced
  • 2 medium carrots, cut into thin matchsticks
  • 1 red onion, diced
  • 3 tablespoons superfine sugar
  • 1 tablespoon water
  • 3 tablespoons cider vinegar
  • 1/2 cup vegetable oil
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon celery salt
  • 1 teaspoon mustard powder

Recipe

  • 1 soak the vegetables in iced water for 1 hour, drain and dry.
  • 2 bring the dressing ingredients to the boil in a small pan.
  • 3 cook for 1 minute until syrupy, then cool slightly.
  • 4 add to the vegetables and mix well. chill for 30 minutes.
