Funggi (swiss Potatoes And Apples)

Total Time: 1 hr 30 mins Preparation Time: 50 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 apples, peeled, cored and quartered
  • 3 tablespoons sugar
  • 3 cups water
  • 3 tablespoons butter
  • 1 onion, sliced
  • 6 potatoes, peeled and cubed
  • 1 1/2 teaspoons salt (or to taste)
  • 2 tablespoons cider

Recipe

  • 1 combine apples, sugar and water in a saucpan.
  • 2 bring to a boil.
  • 3 cook for 3 minutes.
  • 4 melt butter in a large saucepan.
  • 5 add onions.
  • 6 saute for 10 minutes, stirring frequently.
  • 7 add potatoes, salt, cider and apple mixture, including any liquid.
  • 8 cover and cook for 30 minutes, or until very soft.
  • 9 serve hot.
