Drambuie Spiced Peaches

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 1/4 cups cold water
  • 1 cup caster sugar
  • 1/4 teaspoon nutmeg
  • 1 cinnamon stick, 2-inch
  • 10 peaches, peeled, pitted and halved
  • 4 tablespoons drambuie

Recipe

  • 1 combine water, sugar, nutmeg and cinnamon stick in a pan and cook over very low heat until sugar dissolves.
  • 2 increase heat and bring mixture to a boil.
  • 3 boil rapidly one minute.
  • 4 remove pan from heat.
  • 5 put peaches in syrup and return to heat.
  • 6 poach peaches over low heat for 3 minutes.
  • 7 let fruit cool in syrup.
  • 8 stir in drambuie.
  • 9 refrigerate at least 4 hours before serving.
