Focaccia Topped With Tomato & Mushrooms

Ingredients
- 1 tablespoon olive oil
- 6 ounces button mushrooms or 6 ounces cremini mushrooms, sliced
- 1 garlic clove, minced
- 1 (10 -12 inch) focaccia bread (16 oz)
- 1 cup reduced-fat mozzarella cheese, shredded
- 8 ounces diced tomatoes
- 2 -3 tablespoons fresh basil leaves, chopped
Recipe
- 1 heat oven to 350°f.
- 2 in an 8" skillet, heat oil over medium heat.
- 3 cook mushrooms in oil until tender.
- 4 add garlic and cook for about 1 minute or less.
- 5 crain if necessary.
- 6 place bread on cookie sheet.
- 7 sprinkle 3/4 cup of cheese on bread.
- 8 top with mushrooms, garlic, and tomatoes.
- 9 sprinkle with remaining 1/4 cup cheese.
- 10 bake 15-20 minutes or until cheese is melted and bread is hot.
- 11 sprinkle with basil.
