Focaccia Topped With Tomato & Mushrooms

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 tablespoon olive oil
  • 6 ounces button mushrooms or 6 ounces cremini mushrooms, sliced
  • 1 garlic clove, minced
  • 1 (10 -12 inch) focaccia bread (16 oz)
  • 1 cup reduced-fat mozzarella cheese, shredded
  • 8 ounces diced tomatoes
  • 2 -3 tablespoons fresh basil leaves, chopped

Recipe

  • 1 heat oven to 350°f.
  • 2 in an 8" skillet, heat oil over medium heat.
  • 3 cook mushrooms in oil until tender.
  • 4 add garlic and cook for about 1 minute or less.
  • 5 crain if necessary.
  • 6 place bread on cookie sheet.
  • 7 sprinkle 3/4 cup of cheese on bread.
  • 8 top with mushrooms, garlic, and tomatoes.
  • 9 sprinkle with remaining 1/4 cup cheese.
  • 10 bake 15-20 minutes or until cheese is melted and bread is hot.
  • 11 sprinkle with basil.
