Fried Cheese With Shallot Dressing

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 tablespoons sherry wine vinegar
  • 4 teaspoons shallots, minced
  • 1/2 teaspoon capers (whole small or chopped large)
  • 1/2 lb cheese, fairly mild, melting (goat cheese is good here)
  • flour
  • 2 eggs
  • 2 teaspoons water
  • breadcrumbs
  • oil (for frying)

Recipe

  • 1 mix first four ingredients for the dressing, reserve.
  • 2 cut cheese into 1/2 inch slices (i cubed mine).
  • 3 beat eggs with water.
  • 4 dust cheese in flour, then dip in the egg.
  • 5 roll cheese in bread crumbs, coating well.
  • 6 * note - the cheese can be prepared this far up to one day ahead.
  • 7 heat 1/2 inch oil in skillet to about 380°f.
  • 8 fry cheese quickly until golden on both sides, drain.
  • 9 drizzle with the dressing.
  • 10 serve immediately.
