Gjelle Me Zarzavata (albanian Casserole)

Ingredients

  • Servings: 6
  • 1/4 cup olive oil, divided
  • 2 lbs top round beef, cut in 1/2-inch cubes
  • 4 large potatoes, peeled and thinly sliced
  • 2 cups chopped tomatoes
  • 2 carrots, grated
  • 1/4 cup chopped celery
  • 1 cup chopped onion
  • 1 green bell pepper, julienned
  • 2 garlic cloves, minced
  • 3 tablespoons chopped parsley
  • 2 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth

Recipe

  • 1 preheat oven to 375°f.
  • 2 heat 3 tablespoons oil in a large skillet.
  • 3 add meat and brown on all sides. remove and set aside.
  • 4 place potatoes in a greased baking dish large enough to hold all ingredients.
  • 5 spread meat over potatoes.
  • 6 combine tomatoes, carrots, celery, onion, pepper, garlic, parsley, salt and pepper.
  • 7 spread mixture over meat.
  • 8 pour in broth.
  • 9 cover and bake for 45 minutes.
  • 10 uncover, pour remaining oil over top, and bake 20 minutes more.
