Ingredients

- 1/4 cup olive oil, divided
- 2 lbs top round beef, cut in 1/2-inch cubes
- 4 large potatoes, peeled and thinly sliced
- 2 cups chopped tomatoes
- 2 carrots, grated
- 1/4 cup chopped celery
- 1 cup chopped onion
- 1 green bell pepper, julienned
- 2 garlic cloves, minced
- 3 tablespoons chopped parsley
- 2 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
Recipe
- 1 preheat oven to 375°f.
- 2 heat 3 tablespoons oil in a large skillet.
- 3 add meat and brown on all sides. remove and set aside.
- 4 place potatoes in a greased baking dish large enough to hold all ingredients.
- 5 spread meat over potatoes.
- 6 combine tomatoes, carrots, celery, onion, pepper, garlic, parsley, salt and pepper.
- 7 spread mixture over meat.
- 8 pour in broth.
- 9 cover and bake for 45 minutes.
- 10 uncover, pour remaining oil over top, and bake 20 minutes more.
