Clafouti

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 2 1/2 cups ripe cherries, pitted (or use plums, red grapes, blueberries, pears, apples, raspberries, or combination, peeled and sliced)
  • 2 tablespoons kirsch (other other cherry brandy)
  • 1 lemon, zest of, grated
  • 3/4 cup sugar
  • 2 tablespoons sugar
  • 1 cup whipping cream
  • 1/2 cup whole milk
  • 4 large eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cup flour

Recipe

  • 1 toss fruit with the 2 tablespoons of sugar and kirsch and let marinade for 30 minutes.
  • 2 lightly butter and sugar (or use pam) a 9 inch round baking dish, and arrange fruit and its juices on the bottom of the pan.
  • 3 in the bowl of a food processor fitted with the metal blade, process sugar and lemon zest, then add all other ingredients. pour batter over the fruit.
  • 4 bake until lightly browned and puffy, about 30 to 40 minutes. sprinkle with powdered sugar and serve warm.
