Easy And Delicious Chicken Piccata

Ingredients

- 4 chicken breasts (flattened with a mallet)
- 2 tablespoons vegetable oil
- 4 tablespoons flour
- 1/4 cup dry wine
- 1 teaspoon garlic, minced
- 1/2 cup low sodium chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon capers, drained
- 2 tablespoons unsalted butter
- 3 lemons, sliced
- 4 sprigs fresh parsley
Recipe
- 1 season chicken breasts with salt and pepper and dust with flour.
- 2 spray saute pan with nonstick spray and add vegetable oil and heat over medium high heat.
- 3 saute breasts in 2 tablespoons of vegetable oil for approximately 2-3 minutes, flip over and saute 1-2 minutes and transfer to a warm plate. pour off fat from pan.
- 4 deglaze your pan with wine and garlic. cook until garlic is slightly brown and liquid is nearly gone, about 2 minutes.
- 5 add broth and fresh lemon juice and the capers. return cutlets to pan and cook on each side 1 minute. transfer cutlets to warm plate.
- 6 finish with butter and lemon slices. once butter is melted, pour over cutlets and garnish with fresh parsley.
