Feta And Onion Couscous Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 7 ounces couscous
  • 2 lemons, juice
  • 3 tablespoons olive oil
  • 7 -8 tablespoons boiling water
  • 1 leek, thickly sliced
  • 1 red onion, sliced
  • 1 ounce parsley, chopped
  • 1/2 ounce mint, chopped
  • salt & freshly ground black pepper
  • 3 1/2 ounces feta cheese

Recipe

  • 1 put the couscous into a large bowl and add the lemon juice and olive oil.
  • 2 pour in the boiling water, stir, then cover with plastic wrap, and leave for about 10 minutes.
  • 3 cook the leek in plenty of boiling salted water until soft. drain and stir into the couscous with the onion, parsley and mint.
  • 4 season to taste with salt and freshly ground black pepper and stir in the feta.
  • 5 serve immediately.
