Feta And Onion Couscous Salad

Ingredients
- Servings: 4
- 7 ounces couscous
- 2 lemons, juice
- 3 tablespoons olive oil
- 7 -8 tablespoons boiling water
- 1 leek, thickly sliced
- 1 red onion, sliced
- 1 ounce parsley, chopped
- 1/2 ounce mint, chopped
- salt & freshly ground black pepper
- 3 1/2 ounces feta cheese
Recipe
- 1 put the couscous into a large bowl and add the lemon juice and olive oil.
- 2 pour in the boiling water, stir, then cover with plastic wrap, and leave for about 10 minutes.
- 3 cook the leek in plenty of boiling salted water until soft. drain and stir into the couscous with the onion, parsley and mint.
- 4 season to taste with salt and freshly ground black pepper and stir in the feta.
- 5 serve immediately.
