Brussels Sprouts And Bacon

Ingredients
- Servings: 6
- 2 lbs brussels sprouts, trimmed, x cut in base of each
- 6 slices bacon, cut in 1/2-inch pieces
- 1 cup onion, diced
- 1/2 teaspoon caraway seed
- salt & freshly ground black pepper
Recipe
- 1 bring large pot of salted water to boil.
- 2 add brussels sprouts and boil until almost tender, about 7 minutes; drain.
- 3 cook bacon in heavy large skillet over medium heat until crisp.
- 4 remove using slotted spoon; drain on paper towels.
- 5 pour off all but 3 tablespoons bacon drippings.
- 6 add onion to skillet and saute over medium heat until tender, about 4 minutes.
- 7 stir in caraway seeds; add bacon and brussels sprouts and stir until warmed through.
- 8 season to taste with salt and pepper and serve.
