Garlic Mushrooms

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons sunflower oil
  • 2 tablespoons butter
  • 5 scallions, thinly sliced
  • 3 garlic cloves, minced
  • 1 lb small mushroom
  • 3/4 cup breadcrumb
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons lemon juice
  • salt & freshly ground black pepper

Recipe

  • 1 heat the oil and butter in a frying pan or wok.
  • 2 add the scallions and garlic and stir-fry over a medium heat for 1-2 minutes.
  • 3 add the whole mushrooms and fry over a high heat for 4-5 mins, stirring and tossing with a large wide spatula or wooden spoon all the time.
  • 4 stir in the breadcrumbs, parsley, lemon juice and seasoning.
  • 5 stir-fry for a few minutes until the lemon juice has virtually evapourated then serve immediately.
