Greek Summer Salad (anamikti Salata)

Ingredients

  • Servings: 4
  • 4 -5 large tomatoes (seeded & diced)
  • 1 red onion (sliced in long strips)
  • 1 red pepper (sliced in long strips)
  • 1 green pepper (sliced in long strips)
  • 1 cucumber (seeded & sliced in 1/2-inch slices)
  • 15 -20 stuffed green olives
  • 1/8 cup parsley (finely chopped)
  • 1 teaspoon oregano
  • salt & freshly ground black pepper (to taste)
  • 1/4 cup olive oil (about)

Recipe

  • 1 combine all ingredients (except olive oil in a large bowl).
  • 2 toss to combine, sprinkle with olive oil ( about 1/4 cup).
  • 3 chill for 30 min., serve chilled.
