Feta Roast Potatoes

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1 1/2 kg potatoes, washed
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon thyme (or regular thyme if you can't get lemon)
  • 220 g greek feta

Recipe

  • 1 preheat your oven to 200°c.
  • 2 grease a large baking dish.
  • 3 cut potatoes into 1 cm thick slices.
  • 4 arrange them in the baking dish.
  • 5 drizzle potatoes with oil and add the thyme.
  • 6 toss the potatoes to coat in oil and herb.
  • 7 roast potatoes for 45 to 50 minutes or until tender.
  • 8 increase temperature to 220°c.
  • 9 crumble feta over potatoes and toss through.
  • 10 return dish to oven for 10 minutes until feta softens.
  • 11 serve with barbecued greek lamb (barbecued greek lamb).
