Feta Roast Potatoes

Ingredients
- Servings: 10
- 1 1/2 kg potatoes, washed
- 2 tablespoons olive oil
- 1/4 cup fresh lemon thyme (or regular thyme if you can't get lemon)
- 220 g greek feta
Recipe
- 1 preheat your oven to 200°c.
- 2 grease a large baking dish.
- 3 cut potatoes into 1 cm thick slices.
- 4 arrange them in the baking dish.
- 5 drizzle potatoes with oil and add the thyme.
- 6 toss the potatoes to coat in oil and herb.
- 7 roast potatoes for 45 to 50 minutes or until tender.
- 8 increase temperature to 220°c.
- 9 crumble feta over potatoes and toss through.
- 10 return dish to oven for 10 minutes until feta softens.
- 11 serve with barbecued greek lamb (barbecued greek lamb).
